I am exhausted today. My eyes want to shut but I know my work will not appreciate that. So I force them open and I am trying to look alert and awake. I have class tonight as well, and I am definitely having some caffeine a la low carb style. I was woken up this morning by my very ill fiancé. He was running a high fever and was having the chills. So I got up(it was around five) I got dressed and ran to Walgreens to get him some much needed cold and flu medication. I feel for him as I have just finished being sick a few weeks ago, and this flu is brutal. So brutal mine turned into Bronchitis.
On the low carb front, I have been making some new recipes. I have made beer battered chicken, with buffalo sauce. What I did was use some oat flour, egg, and low carb beer. I am not using any measurements as I eyed it…but I guess ½ cup of oat flour, 2 eggs, and ½ low carb beer. Prep the deep fryer; dunk the chicken in the batter. What you get is some tasty fried beer battered chicken. My fiancé loves this recipe. You can also use the batter to fry up zucchini …
Another recipe that has given me comfort is a Mexican dish my grandmother used to make when she visited. It is soooooo good and has a funny name, Chilaquiles.
This I how you make them…you can also add some shredded chicken…I like mine as is. This recipe makes one serving.
What you need:
2 low carb tortillas
Pato sauce (Mexican spicy sauce) or if you need to tomato sauce works ok….
Lots of cheese you can use mozzarella or cheddar, or both!
What you do is get two low carb tortillas and cut up the tortillas in small triangles. Next heat up a pan with some oil (any kind) Fry up the tortillas, drain oil. Then scramble your three eggs and add to the pan. Once eggs are scrambled add pato sauce, enough to taste. Add cheese on top and let melt. What you get is an amazing dish exploding with flavor!!!
